Ingredients

  • 1 tbsp olive oil or butter
  • 1 medium onion, chopped
  • 2–3 cloves garlic, minced
  • 28 oz (two 14-oz cans) pumpkin puree, or 1 fresh sugar pumpkin (3–4 lbs), roasted and pureed
  • 2 1/2–3 cups chicken or vegetable stock
  • 1/2 cup heavy cream, plus extra for garnish
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp ground ginger (optional)
  • 1/8 tsp cayenne pepper (optional)

Directions

  1. Sauté aromatics. Heat the olive oil or butter in a large pot over medium heat. Add the chopped onion and cook for 5–7 minutes, or until softened and translucent. Add the minced garlic and cook for another 30 seconds, until fragrant.
  2. Combine ingredients. Add the pumpkin puree, stock, and all spices to the pot. Stir to combine thoroughly. Bring the mixture to a gentle simmer and let it cook for 10–15 minutes to allow the flavors to meld.
  3. Blend until smooth. Use an immersion blender to puree the soup directly in the pot until it reaches a smooth, creamy consistency. If you don’t have an immersion blender, let the soup cool slightly before transferring it to a regular blender in batches.
  4. Finish the soup. Remove the pot from the heat and stir in the heavy cream. Season with additional salt and pepper to taste.
  5. Serve. Ladle the soup into bowls and garnish with one of the ghost options below.

Sour Cream Ghosts

This simple and elegant ghost garnish uses a squeeze bottle to create a striking design.

Ingredients

  • 1/2 cup sour cream
  • 1 tbsp milk
  • Squeeze bottle
  • Toothpick or sharp knife

Directions

  1. Thin the sour cream. Whisk the milk into the sour cream until the mixture is a smooth, pourable consistency. If it’s too thick, add a little more milk.
  2. Create the ghost. Pour the mixture into a squeeze bottle. Hold the bottle over a bowl of hot soup and pipe a small ghost shape onto the surface.
  3. Add details. Use a toothpick or the tip of a knife to drag the tail of the ghost to create a “ghostly” wispy shape.
  4. Add eyes. Dot on two tiny black peppercorns or olive pieces for eyes.
